Our culinary adventure begins with Ribollita, a Tuscan soup that warms the soul. This thick, hearty soup is a staple during the colder months – a testament to Tuscan resourcefulness, turning humble ingredients into a comforting masterpiece.

Instructions

  • Cook beans until tender.
  • Sauté onion and garlic in olive oil until golden.
  • Add carrots, kale, and tomatoes. Simmer until vegetables are tender.
  • Add beans and bread. Let it simmer until the flavours meld.
  • Serve drizzled with olive oil.
2. Schiacciata alla Fiorentina: A Sweet Indulgence

As Winter settles in, the sweet smell of Schiacciata alla Fiorentina fills the air. This Tuscan orange-scented flatbread is not only a feast for the senses but also a symbol of the region’s rich history.

Instructions

  • Dissolve yeast in warm water. Add a pinch of sugar. Let it sit until frothy.
  • Mix flour, sugar, olive oil, eggs, orange zest, and yeast mixture.
  • Knead until smooth. Let it rise until doubled.
  • Press into a baking pan. Let it rise again.
  • Bake until golden. Dust with powdered sugar.
