Vegan Bagel : Chef Joseph’s creative assembly may steal your heart…

Who doesn’t love a fresh delicious bagel!  Bagels go well with a morning coffee and are a great centre-piece for long brunches.  The best thing about these doughy rings is they are easy to assemble.  Says Karma Kandara’s Chef Joseph: ‘I was inspired by my New York days to create a healthy approach to this favourite breakfast on the go.  ‘When preparing this dish, the big joke in the kitchen was:“Begel Hatiku” which is Indonesian for  “steal my heart”.’

Smoked Carrot Lox
  • Prep Time:3 hours
  • Yields:4 portions

Ingredients:

  • 500 grams
  • 20 grams
  • 20 ml.
  • 25 ml.
  • 60 ml.
  • To Taste
  • To Taste/ A lot

Technique:

  • Combine all of the ingredients in a bowl, cover and refrigerate for two hours.
  • The next day, prepare your smoker to manufacturer’s directions: hot smoke
  • Drain the marinate off of the carrots and reserve.
  • Place in smoker, smoke for approximately 30-40 minutes, just until the carrots “soften slightly.”
  • Remove from smoker and pour half of the marinate back onto the carrots.  Let cool to room temperature.
  • Cover and place in the fridge overnight or until chilled through.
  • Adjust the seasoning to taste with more salt, black pepper and fresh chopped dill if desired.
  • Store up to five days and use as you would any lox application.

Vegan Cream Cheese
  • Prep Time:20 minutes
  • Yields4 portions

Ingredients:

  • 400 grams
  • 100 ml.
  • 15 ml.
  • 3-4 grams
  • 3-4 grams

Technique:

  • Melt the coconut oil and cool to room temp.  reserve.
  • Place the tofu, vinegar, nutritional yeast and salt in a deep bowl.
  • Puree smooth with an emersion blender while slowly drizzling in the coconut oil.
  • Season to taste with more salt if desired.
  • Transfer to a storage container with lid, place in fridge for 4-6 hours until set up.

Note, all the coconut oil may not be needed, depending on how pressed the tofu is before processing.  Adjust consistency to your liking.

Variations:

Have fun while adding your favourite flavourings such as scallions, garlic, sun-dried tomatoes, olives etc.   This is a blanket canvas to allow for your own creativity.

Assembly:

Your favourite Bagel
Smoked Carrot Lox
Vegan Cream Cheese
Lemon wedge

  • Cut your favourite bagel in half.  Toast or not.
  • Spread on the vegan cream cheese.
  • Add the carrot lox. 
  • Squeeze the lemon over the lox.
  • Sandwich back together, cut in half or not.- Enjoy!

Note: you can also add any other ingredient such as sliced tomatoes, cucumbers, red onions, capers etc.  It’s totally up to you!
