Gourmet : Bottle Gourd Caldin

To celebrate the reopening of Haathi Mahal resort in Goa India, Chef Kundun shares this easy-to-make savoury dish featuring the bottle gourd!  Considered one of the healthiest and easily digestible vegetables, bottle gourd tastes similar to squash yet with a slight bitter flavour.  It’s packed with goodness and is often used in soups, dals, stews and even some desserts – as well as in Ayurvedic medicine! Ingredients
  • 1kg
  • 2 nos chopped
  • 2 table spoon
Ingredients for Caldin paste
  • 300 gms
  • 200 gms
  • 2 tbsp
  • 1 tsp
  • 1 inch
  • 4 nos
  • 5 nos
  • 4 nos
  • 4 cloves
  • 2 inch
  • 20 gms
  • 300 ml
Method
  • Clean and peel the Bottle Gourd and discard the seeds and cut into large cubes
  • Grind the masala to a fine caldin paste
  • Heat oil in a pan and saute the onion for few minutes. Add the caldin paste, bottle gourd chunks and water.
  • Simmer it for 2o minutes on low heat till bottle Gourd is cooked
  • Add salt as per taste and serve hot with steamed rice
