Flavours of India Burger Brawl

The Ultimate Karma Burger Competition just wrapped up its most exciting regional heat yet in India, serving up a feast of flavours and culinary innovation that brought the techniques and flavours of the subcontinent spectacularly into play. This gastronomic battleground showcased the rich tapestry of Indian cuisine, with each burger telling a unique story of regional ingredients and cultural influences.

From Kerala’s Arabic-inspired creations to Goa’s kokum-infused “Wedding Burger,” contestants pushed the boundaries of burger craftsmanship. Sikkim’s entry introduced judges to nutritious hard wheat and tantalising millet wine, while other chefs incorporated unexpected ingredients like jackfruit, elevating the humble burger to new heights.

Emerging victorious from this flavorful fray was Chef Avijit from Karma Royal Haathi Mahal, whose innovative jackfruit burger scored an impressive 86%. Close behind were Chef Karma from Sikkim, dazzling judges with a pork burger nestled in a homemade charcoal bun inspired by momos, and Chef Gaurav of Karma Royal Monte Rio, who wowed with a Goan sausage & prawn burger.

Now, all eyes turn to the grand finale at Karma Kandara, Bali, on 10 October. Chef Avijit will face off against other regional champions in the ultimate showdown to create the iconic “Karma Burger.” With such creative and skilled contenders, this finale promises to be a mouthwatering spectacle that pushes culinary boundaries and celebrates global flavours.
