Tell us about your culinary journey. What first inspired you to become a chef?
My name is Galille Bouchikhi, I am 32 and I come from Toulouse in south-west France. I have been a head chef for four years and worked in professional kitchens for over fifteen. I hold a CAP, BP and BTS in culinary arts and trained in renowned kitchens including Thierry Marx’s BiPente, Michèle Sarran in Toulouse, L’Épicurien in Albi and Jérémy Morin in Montpellier, before creating my own private chef business, Le Gourmet Itinérant. My passion began in childhood, when my mother taught me to cook while I looked after my brothers and sisters.
How would you describe your cooking style, and what can guests expect at Karma Le Platane Bistrot?
My cuisine reflects my French-Algerian heritage. I combine classic French techniques with Mediterranean flavours to create refined, vibrant, balanced dishes that tell a story.
What attracted you to Carcassonne and the opportunity to lead the kitchen here?
The chance to lead a welcoming village bistro where honest cooking, quality products and genuine hospitality come first. I also wanted to showcase the outstanding local produce of the region.
How does French culinary tradition influence your cooking?
It is the foundation of everything I do. I build on those techniques while adding my own personality and cultural influences.
Which local ingredients do you enjoy working with most?
I especially enjoy Pyrenean trout and the excellent seasonal produce from south-west France.
If a guest could try only one dish, which would you recommend?
The Pyrenean trout gravlax with crunchy cucumber, Granny Smith apple, fennel and a dill-basil emulsion. It perfectly represents my style: fresh, elegant and full of flavour.
What transforms a meal from simply good to truly memorable?
Attention to detail, excellent food, warm service and genuine emotion.
Any new dishes or seasonal menus you’re excited to introduce?
I look forward to developing seasonal menus and introducing subtle touches inspired by my background.
