Carcassonne’s Most Convivial Table

Tucked into the village square of Caux-et-Sauzens, a short drive from the medieval ramparts of Carcassonne, Karma Le Platane Bistrot has established itself as one of the region’s most cherished tables. Under Michelin-trained Chef Gallile, the kitchen celebrates the deep, unhurried flavours of Occitanie – the signature cassoulet, slow-cooked with haricot beans, Toulouse sausage and confit duck, alongside magret de canard with lavender honey and aligot, the region’s gloriously elastic cheese-enriched mash. Local wines from the Languedoc vineyards complete the picture.

This summer, the terrace comes alive with a season of live music that adds another welcome dimension to the convivial La Platane experience. On 21 June, Lucy Lune’s Blues takes over for a Sunday lunch festival running until 5pm. Marc Stone plays blues on 27 June, Dyade brings country on 10 July, and Lucy Lune returns with her Caravan Club on 25 July.

For Members staying at Karma Château de Samary this summer, Karma Le Platane is your perfect culinary and cultural accompaniment. Be sure to book ahead; the terrace fills fast.
