Amaranth : Discover India’s New Superfood

Meet Amaranth, the new superfood you’ll want on your plate to keep your body healthy for the season ahead.  Amaranth is gluten-free and high in fiber, protein and micronutrients. Grown in India, the red Amaranth leaves ‘tambdi bhaji’ are said to be a powerhouse of iron, vitamins and minerals and a known anti-inflammatory used to help lower blood pressure and cholesterol. Amaranth is recommended for creating high-protein nutritional meals such as Chef Kundan’s ‘Amaranth and Walnut Salad’ complimented with Joshua Mendes (Karma Royal Haathi Mahal’s barman)  ‘Amaranth Gin Fizz’ and ‘Spiced Earl Grey Tea’.

Amarnath and Walnut Salad

Ingredients

  • 2 cups
  • 100 gms
  • 5 gms
  • ½ cup
  • 10 nos
  • 25 gms

For dressing

  • 25 ml
  • 1 finely chopped
  • 10 gms
  • 5ml
  • 15 gms
  • 10 gms

Method

  1. in a mixing bowl add all the dressing ingredients and whisk well and let it cool in fridge
  2. in a salad bowl add roasted bell peppers, young amarnath leaves, lollo rosso, tamrind chutney and toasted walnuts.
  3. toss it well with the prepared dressing to coat it evenly.
  4. garnish it with roasted melon seeds and serve

Red Amaranth Gin Fizz

Ingredients

  • 60ml
  • 20ml
  • 15ml
  • 10ml

Glass: Gin Goblet

Method

Add the Gin, Triple Sec, Red Amaranth Shrub and Lime Juice.
Add Ice Cubes and give it a light stir.
Top up with Cantaloupe Soda


Spiced Earl Grey Tea 

Ingredients

  • 15ml
  • 10ml
  • 20ml

Glass: Mule Mug

Method

Pour Lime Juice, Elder Flower Syrup and Orange Juice in the mug. Add freshly brewed Earl Grey Tea. Add a pinch of Fresh Nutmeg, Cinnamon and Smoked Star Anise.
Serve Hot
