The tandoor is one of cooking’s oldest ideas: a clay oven, intense heat, spices and rapid cooking that produces deliciously fragrant, flavourful meat and vegetable dishes. Now the famed Indian culinary tradition has landed at Karma Kandara, with the opening of Tandoori Bar & Grill on 17 July. A stunning new addition to our Karma Beach offerings, set at the foot of soaring limestone cliffs, it is the island’s only beachfront Indian restaurant.

The format is straightforward, yet carefully considered. From 11 am to 5 pm, the kitchen runs a street-food menu built around pav bhaji (spiced vegetable mash with bread rolls), vada pav (Mumbai’s famous potato fritter sandwich), paneer tikka sliders and chicken tikka kathi rolls (a Kolkata-style wrap). Honest, flavourful, unpretentious.

Come evening, the clay ovens take centre stage. The menu deepens into tandoor-grilled specialities, rich curries and sharing plates: adharaki nariyal jhinga (ginger-grilled prawns with coconut cream and curry leaf), laal maas (slow-cooked Rajasthani mutton curry) and baingan bharta (smoky roasted aubergine). Leading the kitchen is Chef Jeevraj Singh, whose career has taken him from his grandmother’s kitchen in Rajasthan through royal palaces and across Karma properties worldwide.
