
di Mare has long been a fixture on the fine dining scene in Bali: a destination eatery whose tantalising menu is matched by its astonishing location, perched high above the Indian Ocean on Bali’s magical Bukit Peninsula.
Last year, di Mare was reimagined as an authentic high-end Italian – the only one of its kind in the area – and we’re delighted to say that it’s already garnering industry recognition. di Mare is now nominated for Exquisite Best Restaurant and Bar 2026, with voting open until 15 May and winners announced in Jakarta on 18 May.
Under Group Exec Chef Joseph Antonishek and Head Chef Stefan Thietz, the newly minted menu leans into Italian fundamentals, handled with a light touch. Pasta leads the way of course (with pizza also taking an obligatory bow). Think linguine primavera, tonnarelli carbonara, squid ink gnocchi — all about texture and balance rather than excess. Seafood follows the setting: Sicilian-style tuna, whole red snapper with tomato and potato, grilled rock lobster with lemon and butter. There’s weight too, in dishes like bistecca alla Fiorentina and slow-braised lamb shank. In short, all the bases are covered with elegance and style.
