By now, Karma Le Platane Bistrot needs no introduction – our Carcassonne outpost is quickly becoming an evergreen classic, thanks to its sun-drenched piazza, seasonal menus, and authentic regional flair. But beyond the kitchen, in the Bistrot’s sequestered cellar, lies another story worth sipping: a wine list rooted deep in the limestone and lore of southern France.
At its heart is Château Caux, our village neighbour and exclusive producer of the Karma-label wines: the crisp Karma Chardonnay, earthy Malepère, and the now award-winning Cuvée Azerole Rosé, recently crowned with gold at the 2025 Concours Agricole de Paris.




Wines are grouped not by grape but by the forces that shape them—Mediterranean warmth (Corbières, Fitou), Atlantic freshness (Cabardès), and mountain altitude (Minervois, Saint-Chinian). There’s Limoux too, with its sparkling heritage older than Champagne itself. And for connoisseurs, the Chairman’s Selection adds gravitas with bottles from Burgundy, Bordeaux, and the Rhône.
