Secret Supper Club #2 Incoming

Our sophomore secret supper club is happening this Friday at Karma Kandara, presided over by our powerhouse polymath chef-traveller-fisherman and Karma Group COO Vic Faulkner. It’s fully booked, but we couldn’t resist previewing the irresistible menu, drawn from one of Vic’s favourite restaurants/cookbooks Trullo… just to whet your appetite for upcoming editions in the series!

The evening begins with sophisticated aperitivi, where house-crafted cocktails featuring premium Italian spirits like Malfy gin and Borgogno vermouth accompany playful bites including diavoli a cavallo and crispy sage-wrapped anchovies. The antipasti course showcases elevated crostini featuring bold combinations – think spicy nduja balanced with ricotta salata, and delicate Parma ham paired with soft quail eggs.

For primi, guests choose between classic mafaldine alla gricia or an indulgent morels and vermouth risotto. The secondi presents slow-cooked beef cheek with Marsala reduction or a delicate grouper fillet served with orange-scented polenta and crispy fennel.

The evening concludes with a selection of northern Italian formaggi, including creamy Gorgonzola dolce and aged Pecorino Romano, followed by either a bright lemon mascarpone tart or rich amaretto-chocolate tiramisu. Traditional digestivi, from herbaceous Braulio to smooth Amaro Montenegro, provide the perfect finale to this culinary journey.
