Did you know that Indonesia lies in the heart of the Coral Triangle – the global epicentre of marine biodiversity? There are single reefs in Indonesia that contain more species than the entire Caribbean. But these fertile reefs and ocean ecosystems are under threat – from overfishing, pollution and above all climate change.
With World Oceans Day falling on 08 June and Coral Triangle Day on 09 June, we decided to create a special Coral Triangle inspired dessert, proceeds from the sale of which at di Mare restaurant will go to support Coral Triangle initiatives, including the building of artificial reef structures which encourage new coral to grow. Besides being for a good cause, we can attest that this dessert is also absolutely delicious: It’s a Purple Ubi Panna Cotta with Spirulina Sponge and white chocolate confection.
The dessert has already been sampled by the editor of Bali’s leading lifestyle magazine The Yak and dessert connoisseur extraordinaire – and we’re happy to say that she lavished high praise on the dish! We’ll be making quarterly donations to the Coral Triangle Center based on sales of the dish – so next time you’re at di Mare – you know what to order!
