Tell us a bit about you…
My name is Ignacio Carvajal. I was born in Buenos Aires, Argentina, and food has always been a fundamental part of my life and culture. Cooking is not only my profession but also my passion, and I enjoy creating moments around the table that bring people together.
What are you bringing from your past experience to Karma Bavaria?
I bring a mix of Latin American flavors, Mediterranean influences, and several years of experience in both traditional and modern kitchens. My journey has taught me the importance of respecting local ingredients while also giving them a creative and personal touch in every dish.
What excites you most about running the kitchen at Karma Bavaria?
What excites me the most is the opportunity to combine the richness of Bavarian products with international techniques and flavours. I’m also looking forward to leading a team where innovation meets tradition, and to surprising our guests with offerings that range from comforting classics to exciting new creations.


What kind of culinary experience can people expect at Karma Bavaria?
Guests can expect an authentic, fresh, and characterful food experience. My aim is for every plate to tell a story – whether it’s inspired by my Argentine roots, Bavarian tradition, or flavours from around the world. The goal is for each meal to become a special memory.
Is there a signature must-try dish at Karma Bavaria?
Without a doubt, guests should not miss the lake fish menu from Schliersee, which we prepare in collaboration with the local fishery. They raise and smoke the fish from the region with incredible care, and we turn it into dishes that highlight its freshness and quality. It’s a unique gastronomic experience because it connects directly with the surroundings of Karma Bavaria and celebrates the very best of local produce.
