Van life is a joy – but you can make the experience more effortless and smooth if you head out with some great ingredients and recipes tailored for the on-the-road kitchen set up. So here are five great recipes from around the world that you’ll want to add to your repertoire. And they work just as well in kitchens without wheels too!
Shakshuka Eggs
This Middle Eastern breakfast is a perfect pick me up and simple to prepare: Sauté onions, bell peppers, garlic. Add canned tomatoes, cumin, paprika, chilli to taste. Simmer, then poach eggs in the sauce. Cook until set. Serve with feta and parsley.
Pad Thai Noodles
The quintessential Thai street food dish can be made quickly and easily with a ready made Pad Thai sauce: Cook rice noodles. Sauté tofu/shrimp with garlic and green onions.
