The transformation’s pièce de résistance lies in the dramatic opening of four ancient arches across the restaurant’s square frontage – architectural gems that had languished behind walls for decades. Studio Palummo & Cecconi, the visionary architects who orchestrated the Borgo’s original 2003 renovation, presented their restoration blueprint to the Fine Arts Commission last December. In a rare feat of bureaucratic efficiency, approval arrived within mere weeks – a lightning-fast turnaround in a country where such processes typically languish for six to eight months.


The restoration celebrates Tuscan craftsmanship at its finest. Local artisans poured their ancestral skills into every detail: a master blacksmith forged bespoke wrought iron doors that frame the liberated arches, while skilled carpenters crafted a commanding new bar counter from marble and indigenous timber. Regional builders handled the meticulous plumbing, plastering, and painting with the reverent precision such historic properties demand.
